SAMPLE DINNER MENUS

The Aspen House Dinner Menu

The three organic menus below are set out on three different "themes" – Scottish, Polish and English traditional cuisines, with some "fusions" of their own!

MENU 1 :Scottish

Cullen Skink
A traditional soup from the fishing village of Cullen in Morayshire,
containing nothing but smoked haddock, potatoes,
sautéed onions, milk and pepper.


Roast haunch of wild venison
Seasoned with rosemary, thyme and crushed juniper berries, with
a port and blackberry vinegar gravy.
Served with clapshot, a traditional Scottish accompaniment
of buttery mashed swede and potato seasoned with
salt, pepper and grated nutmeg.


Plum upside down cake
Served with plum and sloe gin ice cream and a three-plum compote


Choice of teas or coffee and a square of organic chocolate

MENU 2 : Polish

Smoked salmon and platski
Scotland meets Poland in this combination of traditionally smoked salmon
served with crispy potato pancakes
and garnished with ‘miseria’, wilted cucumber with sour cream and dill


Loin of wild boar
Roast loin of wild boar served with beetroot risotto and a mild
mustard gravy with braised squash and sliced runner beans


Sernik
Traditional baked Polish cheesecake coated in dark organic cherry
chocolate and garnished with two types of stewed cherries


Choice of teas or coffee and a square of organic chocolate

MENU 3 : English

Pigeon and partridge breasts
Pan-fried breast of pigeon and partridge,
served on a crouton of homemade bread
with a creamy bacon and onion sauce


Roast ham and pease pudding
Another meeting of east and west, a leg of ham Polish style
poached in a vegetable stock and finished in the oven
with a honey and mustard glaze,
served with that ancient English favourite, pease pudding


Apple and almond bake
Quite simply, an apple base with a ground almond topping,
baked to a golden brown and served with our local Jersey cream
